ORGANIC FLAX SEEDS Flax seeds are a food that can be very versatile.
We always grind them fresh as we need them in a little coffee grinder (the kind you can get at most any store, like Wal Mart) . This preserves their nutritional value, since the best way to store the precious flax seed oil is in the flax seed! Then the meal can be added to your cereal, sprinkled on a salad, or baked into bread, muffins, pancakes, or even stirred into oatmeal after it is cooked. A tablespoon or two of seeds (measured before grinding) per cup of flour is a good amount to start with, and add or subtract to find how much is best for you.
My favorite way to eat flax seeds is to grind them up (maybe three tablespoons full) and stir them into a glass of juice or warm herbal tea, even milk. The flax seeds soak up the liquid and thicken my drink to make it like a milkshake. Usually I add other nuts and seeds, also ground in a coffee grinder, and a little maple syrup to make a quick, hearty breakfast drink.
